After the VMworld 2008 announcements (see virtualization.info summary here) VMware published some videos about key new features coming with VMware Infrastructure 4.0:
They also offer a glimpse at the new vCenter (formerly VirtualCenter) 4.0 interface.
They are definitively worth a look.

The Host profiles is definitely something new that I was not aware of at VMworld. Though from the video, it sounds like you still need the basic ESX installed on your server before you can bring it into VC Cluster and then apply your host profile. If that's the case, most organization still rely on a provision tool and usually through that process, you'll automate the configuration and host profile. So I don't know how useful this would be if it can't handle a full ESX provision from installation to configuration.
